POST OF EXECUTIVE SOUS CHEF


SriLankan Catering Limited, a fully owned subsidiary of SriLankan Airlines continues to uphold global high standards in airline catering. With many global culinary feats and awards under its belt which include five Mercury Awards from the International Travel Catering Association (ITCA), the company is equipped with a state of the art Flight Kitchen for the production of food and beverage to the highest quality standards. SriLankan Catering is the sole caterer at Bandaranaike International Airport, Katunayake, Sri Lanka. The company is looking for energetic, enthusiastic, self-motivated person for the above post.

The company is looking for an Executive Sous Chef (Local/Expatriate) to be in charge of its food and beverage operations. The successful candidate will be responsible for creating high quality food and beverage to discerning passengers. The person should have proven experience in innovative international airline cuisine which appeals to an exclusive range of sophisticated palates.


Duties and Responsibilities:

βΆ Be in charge of the full range of food and beverage production and services
βΆ Continuous development and improvement of menus
βΆ Produce and plate food accordance with agreed recipes and quantities with accuracy within agreed timings maintaining highest standard of quality
βΆ Implement and produce cost effective procedures and quality controls to ensure that standards are maintained at the highest level
βΆ Lead, motivate and develop Flight Kitchen staff
βΆ Co-ordinate Culinary requirements of Airport Restaurant/Lounge Operations
βΆ Control food cost, prepare budgets and ensure that financial targets are achieved
βΆ Training, Guiding, disciplining and supervising the work of other members of staff in order to enhance team member performance


The Ideal Candidates Should Possess:

βΆ A Culinary Degree/ Higher National Diploma from a recognized institution.
βΆ A proven track record with a recognized establishment / airline catering company in a similar capacity for a minimum of six (06) years
βΆ Having Airline Catering Experience would be advantageous
βΆ Knowledge on HACCP / ISO Standards / Food Hygiene
βΆ Excellent leadership skills, strong communication, problem solving and creative ability
βΆ Sound planning and organization skills coupled with a methodical approach to work
βΆ Willingness to face challenges with a positive attitude
βΆ Should be below 45 years
